Ancel keys was a physiologist at the university of minnesota with a strong interest in the epidemiology of coronary heart disease
in 1947 he initiated the first prospective study of this disorder in a group of local businessmen and found a correlation between raised serum cholesterol and coronary mortality and morbidity
surveys had suggested that the differences in the diet were responsible for geographical differences in the prevalence of CHD
to pursue this, Keys undertook feasibility studies in countries with the lowest and highest recorded rates of CHD, namely Japan and Finland which became the seven countries study in 1957
men between the ages of 40-59 were enrolled and of 12,270 men
age standardised prevalence of CHD at entry was muchhigher in Finalnd ad US that most other countries
incdience of CHD correltaed with differences in the frequency of hypercholesteroleamia adn in percentage of calories provided by saturated fat in each country
in light of these findings, Keys lobbied for major changes in the united states and finland leading to a reduction in saturated fat consumption and replacement with polyunsaturated fat
